If you’re in need of a healthy, energising and protein packed snack that’s quick to prepare, give these superfood protein balls a try!
2 scoops protein powder ( I used vegan acai & blueberry flavoured powder)
1/2 cup almond flour
2 tablespoons almond butter
1/4- 1/2 cup water
1 cup popped amaranth (use these instructions to prepare your own or buy it ready in a health food store)
1 handful dried goji berries
(if you need it sweeter, add a little bit of maple syrup)
Put the protein powder, the almond flour and the almond butter (and the maple syrup if you’re using it) into a blender and blend until well mixed. Then, slowly add the water little by little, blend after each time you add water, and stop when the mixture turns sticky and starts to form a ball inside the blender. Then, move the mixture to a bowl, add the amaranth and the goji berries, and mix the ingredients together using your hands. Shape the mixture into little balls and store them in the fridge until you eat them!
