If you’re looking for sneaky ways to get more vegetables into your diet, try these zucchini fritters! They’re easy to make, taste good and you’ll get that extra dose of vegetables too.
Ingredients (makes about 20 fritters):
2 medium sized zucchini
1 cup wholegrain flour of choice
2 teaspoons salt
1/2 teaspoon pepper
Wash and finely grate the zucchini. Move the grated zucchini to a bowl, add the flour, salt and pepper and mix well. Then, add the eggs and mix again.
Put a little bit of oil in a coated pan, and heat it up on medium heat. Once hot, start frying the zucchini fritters on both sides until golden-brown (1 big tablespoon of your mix = 1 fritter).
You can serve them with salad and potatoes, rice, or on a burger. We had them with oven potatoes and a tomato salad!
