Protein truffles

It is important that we get enough protein for many reasons. Our bodies need protein to build, repair and maintain body cells (including muscle cells) and organs, to make hormones and enzymes which regulate body functions, and to make antibodies and other important components of the immune system. If you are looking for a delicious way to add more protein into your diet, try this recipe for protein truffles!

Ingredients:

For the filling:

3 scoops flavoured protein powder (I used pistachio)

1/4 cup ground almonds

1 handful cashews

2 teaspoons almond or cashew butter

1/8 cup water

For the coating:

50g dark chocolate

 

Instructions:

Put all the ingredients for the filling in a blender and blend until mixed well, but some texture remains. Then, shape the mixture into little balls, place them on a flat plate leaving some space in between them so they won’t freeze together, and place in the freezer for 15 minutes.

While the filling is in the freezer to make the coating process easier (the chocolate coating will harden right away on the frozen filling), melt the chocolate. Get the filling out of the freezer and dip the individual pieces of filling in the chocolate until coated evenly. Place the coated truffles on parchment paper and keep them in the fridge.
