Healthy vanilla “cream” filled strawberries

If you’re looking for a delicious and healthy dessert recipe for Mother’s Day tomorrow, look no further! These vanilla “cream” and chocolate chip filled strawberries are also great for party platters or any other time you’re looking for something fancy but not too complicated to make. Give them a try!



Ingredients (makes 30-35 medium sized filled strawberries):

Strawberries (washed)

5 tablespoons coconut cream (the thick paste from a can of coconut milk)

1 teaspoon maple syrup

The seeds from 1 vanilla pod (or 1/2 teaspoon vanilla powder)

Dark chocolate chips



Put the coconut cream, the maple syrup and the vanilla into a blender and blend until well mixed. Store the mixture in the fridge.

With a thin and sharp knife, hull the strawberries and also cut a little bit off at the bottom of the strawberries, so that they’ll stand upright. Get the coconut cream mixture out of the fridge and fill the strawberries with it. Then, just place a few chocolate chips on top of each strawberry, put the strawberries on a flat plate or tray and store them in the fridge until served!
