Easy black bean salad

This salad is ideal for when you really don’t want to cook and don’t have too many fresh ingredients at home either, but would still like to eat something nutritious and healthy that also tastes nice.




1 can black beans

1 can sweetcorn

1 can artichokes

3 fresh tomatoes

3 tablespoons lime juice

2 tablespoons olive oli

Mixed herbs & salt to taste



Drain the beans and the sweetcorn and put them into a salad bowl. Drain the artichokes, cut them into smaller pieces and add them to the bowl. Then, wash and cut the tomatoes and also add them to the bowl. Finally, add the lime juice, olive oil, herbs and salt and mix well. Enjoy by itself or with bread!
