If you are expecting a busy morning, make this for breakfast the night before! It’s ready to eat or to take on the go in the morning and gives you everything you need to start your day: Protein, healthy carbs, healthy fat and fiber.
Ingredients:
1 cup oats
1 tablespoon chia seeds
1 tablespoon flaxseeds
1 tablespoon sunflower seeds or mixed seeds (I used a sunflower and pumpkin mix)
4 tablespoons soy yogurt (or yogurt of choice)
3/4 cup almond milk (or milk of choice)
1/3 teaspoon cinnamon
1 teaspoon maca powder (optional)
1 teaspoon maple syrup
1 cup fresh or frozen berries (if frozen, take them out of the freezer to let defrost over night)
Dark chocolate to garnish (optional)
Instructions:
Put all the ingredients except the berries and chocolate into a bowl or glass and mix well using a spoon. Cover, and leave in the fridge over night. In the morning, just add the berries and chocolate if using, and you’re good to go!
