Ingredients (serves 4-6):
2 big handfuls (ca. 650g) fresh carrots
1/2 cup sunflower seeds
1/2 cup raisins
4 tablespoons lemon juice
2 tablespoons olive oil
Peel and grate the carrots and put them in a bowl. Add the sunflower seeds and raisins and mix well. Then, add the lemon juice and olive oil and mix well again. Serve as an appetiser or side dish!
