Banana, chocolate chip & protein pancakes

Banana and chocolate aways works, and because I think it’s important to still enjoy food while trying to eat healthy, I created this healthier version of banana chocolate chip pancakes that I’m sure you’ll enjoy!

 

Ingredients (makes 5-6 pancakes):

1 ripe banana

2 eggs

2 scoops protein powder (I used pistachio, but any flavour will work)

1/4 cup buckwheat flour (can be substituted with any other flour)

1 teaspoon coconut oil

small handful dark chocolate chips (or dark chocolate cut up into little pieces if you’re like me and don’t have any chocolate chips at home)

 

Instructions:

Put all ingredients except the chocolate chips into a blender and blend until you get a smooth consistency. Then, mix in the chocolate chips using a spoon. Heat up a non-stick pan with a little butter or oil in it (I used coconut oil) and fry one pancake at the time on both sides until golden-brown. Serve with whatever you like. They taste great with fresh berries!
