Protein bars are awesome, right? I love to have them as a quick snack, especially as I’m strength training on a regular basis. Unfortunately, the are also pretty expensive and often have ingredients that aren’t absolutely necessary.
These homemade vanilla cookie dough flavoured protein bars have only six ingredients, are easy and quick to make and taste amazing. Give them a try and let me know what you think!
Ingredients (makes 14 bars):
1 cup vanilla protein powder (I used Alpha Foods plant based vanilla protein- linked below)
1/4 cup almond flour
1/3 teaspoon cinnamon
2 tablespoons unsweetened cashew butter
about 16 tablespoons plant milk (I used rice)
2 tablespoons dark chocolate chips (I used dark, sugar free ones- linked below)
Instructions:
Put the protein powder, almond flour and cinnamon in a bowl and mix well.
Add the cashew butter and mix well again, using your hands.
Then, slowly add the milk spoon after spoon, and mix the ingredients together from time to time using your hands to get an idea of the consistency. Stop adding more milk when the consistency of the mix is sticky enough for you to shape the dough into a ball, but still as dry as possible. (If you add too much milk, you can add more almond flour or protein powder to even it out.)
Once you have your desired consistency, add the chocolate chips to the bowl and knead them into the mix using your hands. Then, shape the mixture into a ball.
Line a small tray with parchment paper, place your mixture onto it, and flatten it into a rectangle using your hands and/or a spoon.
Put the tray in the fridge for at least 1 hour to allow the mixture to harden a little bit. Then, cut the mixture into bars or squares of your preferred size.
Store the finished bars in the fridge.
