It doesn’t always have to be meat! If you are looking for a quick and tasty alternative to meat in a meal or if you’re cooking for vegetarians and don’t know what to make, look no further. These chickpea-based patties are quick and delicious, and in addition to that they’re a good source of protein. If you would like to make them vegan, just replace the eggs in the recipe with a vegan alternative to eggs. Give them a try and let me know what you think!
Ingredients (serves 4):
1 medium zucchini
ca. 500g canned, drained chickpeas
2 eggs
paprika, cumin, coriander, salt and pepper to taste (or ca. 2 small teaspoons of a ready made oriental spice mix)
Instructions:
Grate the zucchini and put it to the side. Then, put all the other ingredients in a blender and blend until they’re mixed well. The consistency should be almost smooth, but with some texture. Move the mixture to a bowl and mix with the grated zucchini using a spoon. Then, form flat patties about the size of your palm and fry them in a coated frying pan with a little bit of oil from both sides until golden-brown. Serve with rice or oven-baked potatoes, mixed vegetables and a yogurt-based dipping sauce.
