Healthier french toast

Give this easy and quick french toast recipe a try if you’re looking for a healthier brunch item!

 

Ingredients (makes 4 small slices of toast):

4 small slices wholegrain toast

2 eggs

1/2 cup milk of choice

1/4 teaspoon cinnamon

berries of choice & maple syrup to serve

 

Instructions:

Whisk the eggs, milk and cinnamon together in a bowl.

Then, heat a little bit of coconut oil in a coated pan.

Soak one piece of toast at the time in the egg & milk mixture from both sides, shake off the excess liquid, and then fry the toast in the pan from both sides until golden brown.

Serve right away with fresh or defrosted berries and a little bit of maple syrup.
